Anchovy, known in the kitchen mainly as anchovies, is a sea philanthroped fish. Anchovies are hand-cleaned and seasoned only with sea salt on the same day they are caught.
They are then stored on ice and processed within 24 hours. Longer maturation and low temperature ensure first-class quality. The maturing process is controlled for 4-6 months. Thanks to this procedure, their meat retains its nutritional and qualitative values. They excel in their distinctive and unmistakable taste, mainly due to the balanced salt content.
