Girgentana goat cheese with a medium soft structure, aged 8 to 24 months. Montalbo Farm, which produces them, is the only company to produce cheeses made only from goat's milk Girgentana, an endangered native Sicilian breed, and the Slow Food Presidium. With a sweet and intense taste accentuated by aging are the tones of herbs and hay.
