Pancetta is made from boneless beef rib. It is marinated in sea salt and a mixture of spices, where the most prominent ingredient is garlic and thyme. The salting lasts three weeks and is dried at 12 °C and 75% humidity for 3 to 6 months.


  • Before consumption, let it warm up at room temperature, the taste and aroma will be emphasized and the slices will go better apart. Ideal as tapas with a glass of wine, but you can also use it for cooking.
