Ragusano D.O.P is one of the oldest cheeses made in Sicily. It is a cheese made exclusively from pasteurized cow's milk with red spots. The aged Ragusano D.O.P has its characteristic shape with a smooth golden bark, which tends to turn brown. It is a compact draft cheese with a strong, aromatic and slightly spicy taste that persists on the palate.
