TARANTELLO DI TONNO ROSSO IN OLIO DI OLIVA
Tarantello (a rare and valuable part of this fish) is the lower abdomen, obtained from a strip that extends a little further from the navel of the tuna. Tarantello, which is such a small part, can only be obtained from large tuna according to craft techniques passed down from generation to generation. It is softer than red tuna fillets without reaching the fattest part of the ventrecha, which, however, does not lose its taste. Olive oil enhances its taste, making it even softer and tastier.
