LATTUME DI TONNO IN OLIO DI OLIVA
Tuna lattume is a typical fish product used as an ingredient in sicilian cooking, it is the male equivalent of bottargo. It is obtained from the gonads and it is necessary to catch male fish during the breeding season. The bags of the seminal fluid must be as full as possible; they are taken, cleaned, boiled in water and salt and then cooled. At this point the lattume is drained and stored in glass jars with olive oil. Its natural and genuine flavor gives your dishes a Mediterranean touch.

It is excellent as an appetizer, just drizzled with lemon, or it is also great for pasta.
Our tip : Make sauté of garlic, oil and chilli, add diced lattume and pour white wine over everything and cook until the alcohol evaporates. Finally, you can add the halved, fresh cherry tomatoes and cook for another 5 minutes. Then just mix with the pasta. We recommend pouring the pasta 2 minutes before cooking and cook it in a pan with the prepared sauce, the pasta is better flavored.
